Longevity spinach is my preferred perennial "spinach" alternative. The flavor has a peppery undertone with notes of lemon. Texture is crisper and takes longer to wilt when used raw compared to other varieties. However, when raw the leaves are slightly furry like a peach. When cooked it can be used in place of spinach and most people wont know the difference.
